– Mahmudiye

This was Sultan Mahmud II’s favorite dish and was named in his honor. Mahmudiye, which was prepared by roasting the village chicken in a stew flavored with almonds, apricots, raisins, honey, cinnamon, and lemon juice, was one of the indispensable winter dishes at Topkapi Palace. It is known that Mahmudiye took his first place on a party menu at Edirne Palace in 1539. Today, the recipe is very popular with tourists visiting Istanbul.

– Milk kebab

Doesn’t a combination of milk and kebab sound interesting? This unique flavor was one of the most famous dishes in Ottoman cuisine. In this recipe, the meat is boiled in milk and added on a skewer.

– Mutancana

Mutanca is one of the interesting Ottoman dishes. This recipe mixes lamb, apricot, shallot, red grapes, honey, and almonds. Also, according to the Ottoman legend, this recipe appeared in Edirne’s Palace, and was also one of the favorite meals of Sultan Fatih Mehmet.

– Dolma

Dolma is one of the most exotic dishes of Ottoman cuisine. Its recipe consists of lamb meat, rice, spices, almonds, and pistachios, with the ingredients being placed in a melon and baked in the oven.

– Akike

The famous Akike is made with mutton, bacon, yogurt, cinnamon, and various spices cooked in a casserole. This quite strange mixture was one of the most popular dishes in palatial cuisine.

– Chicken

Although it is very common in almost all Latin American countries, the idea of meat on a spit started with the Arabs. The chicken kebab was cooked in Ottoman palaces only for the sultan, and not even the leader’s cooks knew how to prepare this dish. Today, the delicious meal is prepared by resting a whole chicken and mixing it in spices and onion juice.
